2 lbs lean stewing beef, cut into small bite sized pieces

2 large carrots, chopped
|

2 stalks celery, chopped
|
|
1 large onion, chopped
|

3 cups Tomatoe Juice (I use V-8)

1 cup water
|
|
1/2 cup minute tapioca
|
|
2 Tablespoons sugar
|
|
1 tablespoon salt
|
|

1/2 teaspoon pepper
|
|
1 teaspoon basil
|
|

Instructions |

|
Preheat oven to 300.
|
|
|
Mix everything together in a large dutch oven or stewing pot EXCEPT potatoes. Mix well.
|
|
|
Bake, covered for 2 1/2 hours. Then take out, add in the potatoes and stir once more. Place back in oven for another hour.
|
|
|
Take stew out of oven, stir once, then recover and let sit for 1 hour.
