Author Notes- This recipe is strictly to taste. It's
meant to be a guideline. Experiment and Enjoy.
Use the best quality frozen corn you can find. We
freeze our own each summer.
Thaw corn and add the rest of the ingredients, to taste.
Put everything in a large bowl and taste. Let sit at
room temperature for an hour so vinegar takes the 'bite'
out of the onion. Adjust to taste before serving.
