Stir flour, sugar, salt and soda together in a large mixing bowl. Add brown sugar, butter, sour cream, egg and vanilla. Beat until well blended. Fold in rhubarb. Turn into a 9 x 13 inch greased pan. Combine sugar and cinnamon and sprinkle over top of cake. Bake in a preheated 350o oven for 50-55 minutes or until cake tests done. Cool in pan. If desired, serve warm, topped with sweetened whipped cream or sour cream. Makes 12 servings.
