1 (5 oz.) can water chestnuts, drained and cut into thin strips
1-2 tsp. soy sauce
1/8 tsp. ground ginger
1 Tbsp. chopped parsley
Instructions
Combine all ingredients. Chill. Serve on greens garnished with mandarin oranges and ripe olives. Four servings.
This is a nice variation of an old favorite. Don’t be afraid to add the entire can of water chestnuts even though it looks like a lot. This could also be used as a sandwich spread.
