Melt butter in saucepan. Add flour and stir. Add milk bit by bit till
thick. Add cheese, salt and pepper. Remove from heat and stir in
yolks. Beat whites until stiff – fold in.
Grease only bottom of baking dish or several small dishes.
Pour in mixture, bake in slow oven at 160°C/325°F for 30-45 min.
Can add strips of bacon on top before baking; can add corn and
only use 250 ml. cheese, or 250-500 g. asparagus and 250 cheese
and then substitute liquid from canned asparagus for part of milk.
