Ingredients
2 tbsp oil
4 garlic cloves, minced
2 tbsp ginger, minced
2 tbsp curry
1 tsp cumin
1 tsp chili powder
1 tsp turmeric
1 tsp cinnamon
¾ tsp salt
¼ tsp pepper
1 bell pepper, diced
2 small potatoes, peeled and diced
2 ½ c. canned tomatoes
1 c. lentils, rinsed

Heat oil; add garlic and ginger. Cook 2 min.
Stir in potatoes and peppers, sauté 4 minutes.
Add lentils and spices, cook 2 minutes to coat.
Add tomatoes, salt and pepper and 1 ¾ c. water (or broth). Bring to
a boil. Simmer, cover and cook 30 minutes.
