Simmer lentils until tender, put in bowl with 1 tbsp vinegar, salt and
pepper.
Cook couscous, remove and cook. Add 1 tbsp oil and cool.
Whisk garlic, 2 tbsp vinegar, 3 tbsp oil and salt and pepper. Stir all
together and cool. Chill 3 hours or up to 24 hours.
Add remaining ingredients and season with salt and pepper.
