Carol's Classic Guacamole

2 ripe avocados
|
|
1 large garlic clove, smashed to a paste (I use 1/2 tsp. minced jarred)
|

3 to 4 TBS. lime juice (I try to use fresh, but sometimes use the kind in the fake plastic lime)
|

1 jalapeno (or to taste), seeded and minced (wear gloves!)
|
|
2 tomatoes, seeded and chopped fine
|
|
1 small red onion, chopped fine
|
|
1/4 c. cilantro leaves, finely chopped
|
|
Salt and freshly ground pepper

|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|

Instructions |
|
|
Halve and pit avocados and scoop flesh into a large bowl. Mash avocado with a fork or potato masher and stir in remaining ingredients, combining well.
|

Chill, covered with plastic wrap, for at least one hour and up to 1 day. Stir guacamole well.

Serve with tortilla chips.
