1/2 lb. (2 C. ) cooked chopped chicken breast meat
1 can(15oz) black beans rinsed and drained
1 can(14 oz.) diced Mexican style tomatoes
1 can(11oz) Mexican style corn
1 bottle(8 oz) taco sauce
1 C. Chopped red bell pepper
1 can(4 oz) diced green chilies
2 T. Finely chopped fresh cilantro
Instructions
Combine cornstarch and water in a small bowl. Stir together
chicken broth, chicken, black beans, tomatoes, corn, taco
sauce,red pepper, green chillies and cornstarch mixture and
bring to a boil, stirring occasionally. Add cilantro. Simmer
Garnish suggestions- squeeze of lime, tortilla strips or chips,
shredded cheddar cheese.
