8 chicken breasts

1 cup chicken stock
|

1/3 cup brown sugar

Instructions |

|
Toss onions, pineapple and red pepper with oil and
roast on foil-lined sheet pan for 20-30 minutes.
|
|
|
Mix rub together- flour, cinnamon, chili powder,
salt, cumin, pepper, cayenne. Coat both sides of
chicken with rub.
|
|
|
Brown chicken in saute pan with oil. Add pineapple
mixture, stock and brown sugar.
|
|
|
Bring to boil, reduce to simmer. Cover and cook
about 10 minutes.
