Cut slices into pork about 1 inch apart, but do
not slice all the way through the roast. Place an
apple wedge into each slice. Line the bottom of
your slow cooker with onion slices. Place roast on
top of onions. Use any leftover apples by dicing
them and scattering them around the edges of the
roast, Drizzle honey over the top. Sprinkle with
thyme and salt and pepper. Cook on low for 5-6
hours.
