Mix first five ingredients with 1/2 cup of the water. Cook covered in microwave for 5 minutes or simmer on stove 5 minutes. In a large pan melt butter, stir in flour till it looks bubbly. Gradually add milks, remaining 3 cup water, cooked undrained vegetables and cook over medium heat, stirring constantly till thick.
VARIATIONS-
CREAM OF CHICKEN SOUP- Add ½ tsp poultry seasoning and 1 or 2 cups cut up cooked chicken.
CHICKEN IN CURRY SAUCE- If you want it thicker, add a little less milk. Add curry powder to taste (1/4 to 1 tsp) and 2 cups cut up cooked chicken. To make Hawaiian Haystacks serve over rice and top with Chinese noodles, chopped green onions, chopped nuts, crushed pineapple, chopped celery, raisins, and chopped olives.
CREAM OF TURKEY SOUP- Add ½ tsp poultry seasoning and 1or 2 cups cut up turkey.
CLAM CHOWDER- Add 1 large potato, diced, to vegetables. Substitute 2 bottles (8 oz each) of clam juice for 2 cups of water. After soup is thick add 2 cans minced clams, undrained, and simmer gently to blend flavors.
SEAFOOD CHOWDER- Add 1 large potato, diced to vegetables. Substitute 2 bottles (8 oz each) of clam juice for 2 cups of water. After soup is thick add 2 cans minced clams, undrained, 8 oz thawed frozen shrimp, 8 oz sea scallops sautéed in a little butter, 1 can of fancy crab meat and simmer gently to blend flavors.
CREAM OF BROCCOLI SOUP- Add 1 thawed 10 oz package of frozen chopped broccoli with the vegetables and cook 10 minutes instead of 5.
BROCCOLI CHEESE SOUP- Add 1 thawed 10 oz package of frozen chopped broccoli with the vegetables and cook 10 minutes instead of 5. When soup is thick stir in one can of Frito Lay Mild Cheddar Cheese dip.
CREAM OF ASPARAGUS SOUP- After soup is thick gently stir in 1 or 2 cans of canned, drained, asparagus (either cut or spears that you cut). Simmer gently to mix flavors.
Use any combination of vegetables, meats, pasta, or rice to create your own “cream of” soup.
