Italian Chicken Sausage Links, sliced into half moon shapes
3 cups kale
1 can white beans
1/2 cup carrots diced
1/2 cup onion diced
1 tbsp chopped garlic
3 cups chicken stock
Pinch of red pepper flakes
Parmesan cheese, for serving
Instructions
Saute onions, carrots, and garlic with a pinch of
red pepper flakes. When soft, add sausage. Add
white beans and chicken stock, and about 1 cup of
water. Wilt in kale. Bring soup to a boil, then
lower heat and cover. Simmer for about 30 min. Top
with parmesan cheese before serving.
