1 medium ripe avocado
|
|
1/4 c white onion
|
|
1 can chickpeas, drained
|

2 T lime zest
|
|
juice from one lime
|
|
2 T olive oil
|
|
1 T balsamic vinegar
|
|
2 T sugar
|
|
1/3 cup fresh cilantro
|

Instructions |

|
Dice avocado into 1/2 inch cubes. Place in a bowl with beans and
onion.

Whisk remaining ingredients together in a bowl, or a blender. Toss
with avocado/bean mixture. Chill. Not you, chill the salad.

Obviously you can add feta, goat, or any cheese. This is so basic that you can add almost any veggie, peppers, tomatoes, cukes, etc.
