Preheat oven to 350 degrees. Coat the bottom of a
baking sheet with olive oil, just enough to coat.
Rub the sweet potatoes with the remaining oil and
season with salt and pepper. Use a fork or
pairing knife to poke a few holes in the flesh of
the potatoes, then place on the baking sheet.
Bake in a preheated oven for 60 minutes or until
soft. Remove from oven, cut in half, and remove
flesh, breaking up with a fork.
To make the mashed potatoes-
Warm the cream and butter in a sauce pan until
simmering. Whip in the potatoes using a whisk to
break up and combine. Season with garlic, salt,
pepper, and hot sauce. Serve warm.
