Brown Chicken Gravy- Heat fat to bubbling. Sprinkle in flour and
stir constantly, adjusting heat so mixture still bubbles but isn't
enough to scorch. Cook flour 3 to 4 minutes. Slowly stir in stock
and simmer 5 minutes. Season to taste with salt and pepper. If
gravy is not brown enough, stir in a small amount of kitchen
bouquet.
Season well with salt and pepper. Fry in deep fat until barely
done. Place in roasting pan. Barely cover with Brown CHicken
Gravy. Cover tightly and bake at 325 for 1-1 1/2 hours, basting
frequently. Add more hot water or chicken stock of gravy
becomes too thick.
