2 sheets frozen pastry
|
|
200-300g pumpkin, 2cm cubes
|
|
2-3 rashers bacon, chopped
|
|
Small onion, diced
|
|
100-200g mushrooms, sliced
|
|
1/4 teaspoon ground coriander
|
|
1 tablespoon sage
|
|
4 eggs
|
|
1/4 cup milk
|
|
|
|
Baby spinach leaves
|
|
1/2 cup Parmesan cheese, grated
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Heat oven 200C. Place pumpkin and onion, tossed in oil and
sprinkled with coriander and sage on oven tray 10-15 mins
|

Whisk eggs, milk and cheese.
|
|
|
Arrange veggies on pastry and pour over egg mixture.
|
|
|
Bake for 35-40 mins until just set.
