30 thin asparagus spears, cut into bite sized pieces
15oz can balck beans, drained and rinsed
1 Tbsp chili powder?
2 1/2 cups water
avocado
lime (optional)
shredded cheese (optional)
Instructions
Heat oil in a saucepan and add onion red pepper and garlic. Saute on medium until onion and peppers are soft.
Add quinoa, chipotle peppers, oregano and chili powder. Stir about 30 seconds then add 2 1/2 cups water.Bring to a boil, then reduce heat to low, cover with a lid and let simmer for about 10 minutes
Add asparagus and cook for another 2-3 minutes.
Add black beans and fluff quinoa with a fork
