Mix tomatoes and their liquid, paste, seasonings, onions and mushrooms. Heat to boiling. Reduce heat, cover, simmer 30 mins. Discard bay leaf.
Combine eggs, cheeses (ricotta and parmesan) and spinach.
Arrange 1/2 of noodles (hard) in 9x13 pan. Spoon 1/2 of cheese mixture over noodles and sprinkle with 1/2 of mozzarella. Top with 1/2 of sauce. Repeat.
Bake at 375 for 45 mins. covered. Let stand 10 mins. for easier serving.
