for the person looking for- SALMON PATTIES, 1 can (14 3/4oz) salmon(remove bones & save juice), 1/2 med onion, 2 eggs, 1tsp ground pepper, 1tsp lemon juice, 1 WHOLE sleeve of saltine crackers, crushed. Put salmon & juice into large bowl, add 2 eggs & lemon juice. Stir well. Add onion, pepper & crackers. Stir. Form into patties 3/4 -1 inch thick. Set aside on plate or wax paper for 5 mins. In large frying pan heat 1/2 inch of oil to med-high temperature. Do not skimp on oil. When oil is hot place patties in pan & cook 4-5 mins per side. Make sure patties get cooked all the way through. Center should not be cold. Patties will be brown, crunchy & very delicious. Makes 5-6 patties.
