Steam cauliflower. Drain thoroughly. Add to food processor with the rest of the ingredients and any spices you want. Process to desired texture.
I add parsley, chives, rosemary, thyme, etc. I don't like the roast garlic flavor with the sweetness of the cauliflower. Lots of pepper and cream make it considerably better but too much liquids makes it runny so be careful.
