To make the sauce combine vinegar, lime juice, adobo, cayenne, cilantro, red pepper flakes, garlic, cumin, oregano, black pepper, salt and cloves in a bowl.
Cut roast or pork into large chunks.
Pour oil into a frying pan and sear all sides of meat on medium-high heat until browned.
Place meat into crockpot and pour sauce over meat.
Pour in the chicken broth and add bay leaves and chilies.
Cook on high heat for at least 6 hours
Shred the meat in the crockpot and serve with lettuce as a wrap.
