2 1/2 Pounds Baby Red Potatoes (sliced into bite size)
1/2 Regular Package Uncooked Bacon (finely diced)
1 Medium Onion (diced)
1/4 Bunch Celery (diced)
8 Cups Milk
4 Cups Water
4 Chicken Bullion Cubes
1 Tsp Salt
1 Tsp Pepper
3/4 Cup Salted Butter
3/4 Cup Flour
Shredded Cheese
Bacon Bits
Instructions
In large pot, boil potatoes in water 10 min. drain
and set potatoes aside until the end. microwave
bacon. saute onion and celery in pan over medium
high heat 5 min.
to large pot add milk, water, bullion, salt and
pepper. cook over medium high 8 min (stirring) dont
let boil.
in small saucepan melt butter add flour and mix
well. cook over medium low heat until bubbles 2-3
min.
While constantly stirring soup, add roux slowly
until think about 4 min. stir in potatoes, bacon
celery onions and cream. add cheese and bacon bits
on top.
