Mix first group of ingredients in saucepan. Gradually stir in boiling water. Cook over moderate heat, stirring constantly until mixture thickens and boils. Boil 1 minute, beat a little of the mixture into the three egg yolks, then into remaining mixture. Return to heat and boil 1 minute stirring constantly. Remove from heat and blend in butter, juice and rind. Fold egg white into cooled filling. Pour into baked pie shell. Cover with meringue and bake until meringue is browned.
