Note- Add additional vegetables such as boiled snap peas, bean sprouts, etc.
Instructions
Prepare the soba noodles as directed on package.
Prepare ice bath. Add cooked soba noodles to ice
bath when soba noodles are fully cooked. Drain.
Incorporate cooked vegetables into soba noodles and
set aside.
Whisk together lemon juice, soy sauce, mirin,
ginger, sugar and sesame oil. Add water to desired
strength. Toss dressing with noodles/vegetables and
serve.
