Swiss Chard- 2 bunches of red or yellow swiss chard
1/2 onion
1 clove garlic
10 kalamata olives
2 chopped tomatoes
Quinoa- 3 cups quinoa-6 cups water
1 lemon
almond shavings
salt/pepper
Instructions
FISH-
Drizzle olive oil on fish while in pan. Sprinkle
with salt & pepper. Cut olives in half and
sprinkle on top of fish. Sprinkle capers on top as
well. Chop tomatoes in chunks and place on and
around fish. Finely chop onion and also place
around fish. Top with bread crumbs. Bake at 350
for 12-14 minutes.
SWISS CHARD-
Saute onion and garlic with olive oil for a couple
minutes. Add olives and copped tomatoes. (If I
have any open I add a splash of red wine). Let
reduce for a bit. Add cleaned and chopped swiss
chard. Drizzle olive oil on top and cover. After
a couple minutes toss with tongs. Swiss chard
should wilt to half its original size.
QUINOA-
Once cooked add olive oil, fresh lemon juice and
crushed almonds and stir.
