Preheat oven to 350 degrees. Brown ground turkey and season with salt and pepper. Drain any liquid. Return browned turkey to pan, add diced onion and green pepper. Cook, stirring often, until onion starts to soften. Combine cooked rice, ground turkey mixture, enchilada sauce mix and salsa and mix well. Pour mixture into a lightly greased 9 X 13 baking dish. Press evenly. Bake 25 minutes. Remove from oven and cover with shredded cheddar and bake 7 to 10 minutes then let stand 8-10 minutes before cutting and serving. Serve on a bed of shredded lettuce. Top with sour cream, taco sauce or salsa.
