4 1/2 cups 1-inch chunks small new potatoes (about 1 1/4 plb)
1/4 cup finely chopped fresh parsley
1 tbsp plus 1 tsp olive oil
1/4 tsp salt
Instructions
Place the potatoes in a 4-quart pot and cover with
water. Bring to a boil over high heat. Reduce the
heat to medium and cook for about 12 minutes or
until the potatoes are tender. Drain the potatoes
and return them to the pot.
Add the parsley, olive, and sal to the potatoes, and
toss to mix well.
