enough beans for whoever you're cooking for (I like black beans)
bay leaves
chicken stock
English style salsa (if you can find it, I like Lizano brand)
Instructions
Cook Rice.
In rice cooker,add a little vegetable oil and allow a bit of red pepper, onion and garlic to cook until translucent.Then add rice and leave to cook. Easy! You can make a day or two in advance as well if you like. I allow the rice to burn a little bit, will give some great texture to the pinto. Use salsa, stock, spices to taste.
Cook beans.
Do this in advance as well, they get better with time. In a large pot cook the red pepper, onion and garlic until translucent once again. Add in the beans and cook however you like. use salsa, stock, spies to taste.
Gallo Pinto.
In a new pan add more red pepper, onion and garlic, cook until translucent. Then add in a few spoonfuls of beans (About 3/4 of the final mixture will be beans, so add quite a bit). Stir and allow to cook. Mash the beans a little bit, just to make the sauce a little thicker. Once you can smell them, add in a few spoonfuls of rice. Remember, you want to have a mostly beans pinto, so not too much. Stir and cook, allowing the rice to take the color of the beans. Add in more spices if needed as well as lots of vegetable oil. Allow rice to burn a litle bit again, make it crunchy.

Serve with a fried egg or sour cream or alone. How you like it!
