Cook coconut rice ahead of time with red pepper, onion and garlic. Figure out the amount of water you would normally need for the given amount of rice..3/4 of this amount will be coconut milk, the other 1/4 is water. Use some chicken sock, bay leaf, thyme, whatever else you want.
If you want beans, just make the beans like normal but add in some coconut milk, make it nice and creamy. You can either make a coconut pinto kind of thing with the rice and beans or just eat them separate.
Coconut chicken.
Add some coconut milk, canned tomatoes, dice whole tomato, garlic, bay leaves, stock, thyme etc.Just make it taste good! Add chicken and let it cook in this mixture. Cook chicken until super tender and coconutty.
