1 small sweet potato, peeled and cut into 1/2-inch cubes
1/4 t salt (optional)
1/4 t pepper
1/8 t dried cumin
1/8 t chipotle chili flakes
Instructions
1- Remove sausage from castings; shape into 1/2-inch balls. Spray
large nonstick skillet with nonstick cooking spray; heat over
medium heat. Add sausage; cook and stir 3-5 minutes or until
browned. Remove from skillet and set aside.
2- Spray skillet with cooking spray. Add onion, bell pepper, sweet
potato, salt, if desired, black pepper, cumin and chile flakes; cook
and stir 5-8 minutes or until sweet potato is crisp-tender.
3- Stir in sausage; cook without stirring 5 minutes or until has is
lightly browned.
