2 T extra virgin olive oil
|
|
1 small onion, roughly chopped
|
|
1 small yellow bell pepper, roughly chopped
|
|
2 medium zucchini, cut into 3/4-inch chunks
|
|
2 Serrano peppers, finely sliced
|
|
1 t garlic powder
|
|
1/2 t cumin
|
|
1/4 t chili powder
|
|
2 1/2 C Chickpeas (Garbanzo beans)
|
|
|
|
1/4 C salsa OR diced spicy tomatoes
|
|
salt

2 C cooked rice
|
|
|

Instructions |
|
|
1- Heat the oil over medium heat in a medium size skillet.
|
|
|
2- Cook together the onion, bell pepper, zucchini, serrano pepper,
garlic powder, cumin and chili powder until vegetables are tender.
|
|
|
3- Add chickpeas and salsa. Cover and reduce heat to low until
chickpease are heated through. Serve over cooked rice.
