Cook noodles according to package directions and
toss with one tablespoon of oil. Set aside.
In large bowl, combine remaining canola oil with
the next 7 ingredients. Whisk to combine well.
Add the noodles, green onions, carrots, mangos,
cilantro, peanuts, and edamame. Toss to combine.
Chill for 2 hours, stirring occasionally to evenly
distribute flavors.
Serve well-chilled. Sprinkle with sesame seeds
just prior to serving. For a complete meal, top
with grilled shrimp, chicken, or pork.
