Rinse fish and set losely in a bag of foil, place in a baking dish. Before sealing the top of the foil together, cover fish with a generous slosh of lemon juice, 5 or 6 pats of butter here and there; lemon pepper, garlic, and salt to taste. Fold foil over and bake in oven at 375 for 20 minutes or until fish is flaky and pink (careful not to overcook).
