Heat oil in a large skillet or wok over medium high heat. Add shrimp, salt and pepper to pan;
cook 3 minutes, stirring occasionally. Remove
shrimp from pan; set aside. Add broccoli,
eggplant, bell pepper, broth and garlic to pan;
cover and cook 4 minutes. Uncover and cook
until liquid has evaporated, stirring frequently.
Return shrimp to pan and stir in soy sauce;
saute 1 minute.
