2 tbsp snipped fresh mint or 1 tsp dried mint, crushed
1 tbsp olive oil
1 tsp salt
1/2 tsp cayenne pepper
Instructions
Trim fat from chops. Place chops in a large
resealable plastic bag set in a shallow dish. For
marinade, in a small bowl stir together honey,
lemon peel, lemon juice, mint, oil, salt, and
cayenne pepper. Pour over chops in bag. Seal bag;
turn to coat chops. Marinate in the refrigerator
for 4 to 24 hours, turning bag occasionally. Drain
chops, discarding marinade.
For a charcoal or gas grill, grill chops on the
rack of a covered grill directly over medium heat
for 11 to 13 minutes or until chops are slightly
pink in center (160 degrees F), turning once
halfway through grilling time.
