First, cook your boba. Pour 2 cups of the water into a small saucepan and bring it to a boil. Once it’s boiling add your tapioca pearls and reduce the heat to medium, stirring until the pearls float to the top of the water. Cook, stirring occasionally, for 15 mins. Remove from heat and cover, letting the pearls rest for another 15 minutes. Meanwhile, prepare a simple syrup. In a glass measuring cup, heat the other ½ cup of water in the microwave just boiling. (This was about 45 seconds for me.) Remove from microwave and add sugar, stirring to combine. Let this mixture cool as the pearls rest.
After 15 mins, drain the pearls and add them to the simple syrup, stirring to make sure they’re evenly coated. Let them sit for about 10 mins. I like to cook the boba the night before and let it sit in the simple syrup. You can store your pearls that way for up to two days.

Once your pearls have sat for at least 10 mins, make your tea. In your favorite bubble tea glass, combine your milk and tea packet(s) and stir until well combined. Strain your pearls and add them to your tea. Make sure you have a wide straw (I grab a couple extras every time I go to a bubble tea stand), and enjoy!!
