In a small bowl, mix garlic, oregano, paprika, salt and 1 Tbsp. lemon juice. Rub mixture all over the outside of the bird. Stuff lemon quarters inside the bird.
Place bird breast-side up in slow cooker.
Add vegetables around bird and pour in enough stock to reach about 1-inch deep around chicken.
Cook for about 3 hours on low.
