Mix broth, mustard, mayo, garlic, and chives in bowl and set aside.
Season chicken with salt and pepper.
Heat oil in a pan and brown chicken on both sides but don't cook all the way through. Remove chicken from heat and set aside.
Pour dijon mixture into pan and simmer on medium heat for a few minutes to thicken.
Return chicken to the pan and continue to simmer until chicken is cooked all the way through.
Top with parsley and serve.
