1 lb. beef top sirloin or beef tenderloin steakscut into 1 in. thick pieces
8 oz. whole mushrooms
2 medium red, yellow or green bell peppers cut into 1 in. pieces
1/2 c. plain yogurt
1/3 c. finely chopped seeded cucumber
2 tbsp. crumbled fat-free feta cheese
1 minced garlic clove
1/4 tsp. black pepper
1/8 tsp. salt
Instructions
In a large bowl combine oil, oregano, garlic, and black pepper.
Cut beef into 1 1/4 in. pieces. Add beef, mushrooms and bell peppers to bowl. Toss to coat.
Thread beef and vegetables evenly onto metal skewer, leaving small spaces between pieces. Grill kebabs 7-11 min. for medium-rare to medium doneness, turning once during that time.
For yogurt sauce, combine yogurt, cucumber, feta cheese, garlic, black pepper, and salt. Serve sauce with kebabs.
