Cut chicken, onion, red pepper, and celery into bite-size pieces. Season chicken with a dash of salt and pepper. Saute garlic and onion in heated oil for 30 sec. Add chicken and cook until it is almost done.
Toss in cashew nuts, red pepper, and celery. Stir fry until the vegetables are slightly softened. Fold in all the remaining ingredients with 1/2 c. of water and reduce sauce until a glaze appears.
