|
1.) In a bowl mix flour, salt, and yeast. Add water. Mix for less
than a minute.
Cover with a towel and let rise for 12 to 18 hours.

2.) Take a kitchen towel and sprinkle the middle GENEROUSLY
with flour.
Scrape dough onto the kitchen towel with a spatula and fold in
dough from each side and let rest for 15 minutes. Shape to a
round loaf, sprinkle generously with flour and let it rise for
another 1-2 hours, covered with a towel.

3.) Place a cast iron pot with lid on the lowest rack on a cookie
sheet and preheat oven to 450F. When oven is ready, remove pot
and slide dough upside down into pot. Cover and bake for 30
minutes. Remove lid and bake another 25 minutes.

4.) Remove bread and let cool on a rack.
BE VERY CAREFUL WITH HOT POT AND WHEN REMOVING LID.
