Preheat oven to 350. Combine corn flakes and pretzels in a food
processor and pulse until coarse crumbs form.

Pour crumbs in a shallow dish and stir in garlic & mustard powder,
paprika. Combine GF flour, salt and peper in another dish and in
another dish combine eggs and soy sauce. Line bowls up GF flour
first, eggs second and crunchies third.

Coat chicken first in the flour mix, shake off excess. Dip chicken
into egg mix; drain. Transfer to crumb mix and coat both sides
evenly.

|
Spray a non stick skillet with cooking spray, working in batches
brown the chicken on both sides and transfer to a large foiled
cookie sheet. Bake for 10 min or until chicken is cooked throughly.

Serve with a homemade mix of regular mustard and honey to create a GF honey mustard.
