Peel, dice, and boil potatoes until fork is
tender. While potatoes are
cooking, melt butter and stir in flour,
making a roux. Add milk to roux and stir over
medium heat until thick and bubbly. Drain potatoes
and combine potatoes and ham in greased casserole
dish. Pour white sauce over the top and top with
cheese if desired. Bake at 350 degrees for 30
minutes or until hot and bubbly.
