Siff flour into a larg bowl, knead into a dough with
butter, sugar and egg. wrap in greaseproof foil and
leave to rest for 2 hours.

Ris the berries and wash them, then let them drain.
Whisk egg yolks foamy together with half the sugar.
Once it's a nice and creamy mixture, stir through
the grated almonds.

Mix the egg whites together with the rest of the
sugar and stir through the almond mixture. Lastly,
also stir through the red currants.
Pre-heat the oven to 190 degrees celsius.

|
Roll out the dough and put into a spring cake tin
with a diameter of 26 cm. Pinch the dough with a
fork and pour in the filling. Make sure it's nice
and smooth. Then bake for 40 minutes.
Leave to cool in tin for half an hour and you're
ready to serve!
