1/2 package (5 ounces) vegan cheddar cheese, grated (Follow Your Heart brand works great) pepper, to
several dashes paprika
1 prepared pie crust
Optional - add roasted peppers, brocolli
Instructions
Preheat oven to 350 degrees F. Saute onions and garlic in olive oil. In a blender, mix together tofu, tahini, soy sauce, and miso.
(MAKE SURE TO PRESS THE TOFU TO REMOVE THE WATER)
Mix the onion mixture, tofu mixture, spinach, and scallions together in a bowl. Add most of vegan cheese (reserving a little bit for the top of the quiche, if desired).
3. Add pepper and paprika. Spread the mixture evenly in the pie crust. Sprinkle remaining vegan cheese on top. Bake for 1 hour.
