Heat skillet with 1 tablespoon olive oil then sauté chicken until
cooked. Careful not to let chicken pieces touch each other in
pan or chicken will steam. Season chicken with salt and
pepper if desired.

While chicken is cooking, boil water for pasta and cook
according to instructions on package.
|
|
|
Add minced garlic and pine nuts to chicken and cook for 2
minutes. Add cooking wine and simmer for a few minutes.
|
|
|
Combine chicken mixture with drained pasta and 1 tablespoon
olive oil and sprinkle with cheese. Toss until well mixed.
