Heat the butter sugar and water in a pan till
sugar is dissolved. Take of the heat and set aside
to cool. Sift flour, bicarbonate of soda and
spice. Mix in the orange rind. Add the cooled
liquid to the dry ingredients. Add the beaten eggs
and mashed bananas. Bake for approx one hour at
170C lowered to 160C until golden. Cover with foil
if necessary to prevent the top from burning.
Allow to cool a bit in the tin before turning out
onto a wire rack.
