Mix all salsa ingredients. Place in fridge. Allow to marinate for
an hour to 1 1/2 hours.
Spray fillets with olive oil. Season with Reata Grill Blend or
your favorite fish seasoning. Cook fish on hot cast iron griddle
2 minutes per side or until fish flakes easily. Serve with
pineapple salsa.
I cooked a quinoa side dish 1 cup quinoa with 2 cups chicken
broth. I added extra salsa ingredients (red bell pepper, cilantro,
onion, jalapeño, pineapple and black pepper). Cook according
to package directions.
