Banana,almond & oat cake (gluten free)
Reheat oven 180 C.
In a bowl put 1 1/2 cups oats(if you are on a
gluten free diet make sure the oats are gluten
free ),1/4 cup sugar ,1 teaspoon cinnamon,2
teaspoons baking powder,1/2 teaspoon baking
soda,1/2 cup ground almonds and 1/2 cup raisins,I
used sultanas. You can use dried
cranberries,strawberries,berries or your fave
raisins.In another bowl mix 1 cup mashed bananas
,5 tablespoons milk (substitute milk if you are
lactose intolerrant to apple juice or another
alternative) 1 large egg ,1 teaspoon vanilla .
Add the liquids to the dry ingredients and mix
well. Put the cake batter in a 23cm x 23cm greased
tin or dish and bake for about 25 minutes .
Depends on your oven . Test with a skewer to see
if its ready.
When it was still hot from the oven I sprinkled a
mixture of some sugar,cinnamon and crushed roasted
almond on top. Cut When cold . Can be eaten for
breakfast. or as a snack.
